Oats Casserole

This is a healthy way to start your day! 
This recipe is the perfect way to offer a healthy and yet good looking breakfast, as my friend's two year old calls it "breakfast cake", he loves it! And I love seeing him enjoying it so much,

I usually make it when I have friends and family over for brunch, even the ones that are not fans of porridges or very healthy breakfast love it and even ask for it the times I change the menu of the weekend brunch.
You can really add your favourite fruit combination and will always taste great!

I bumped into the original recipe scrolling down on pinterest, it looked so yummy that I had to try it!
After making it for the first time I've made some changes,the vegan version it tastes great, you can see all the options and choose the one you like best.

Ingredients:

  • 2 Cups of whole Oats ( I usually use a mix of 4 whole grain)

  • 2 Tablespoons of  walnuts or Pecans (crunched)

  • 2  Cups of milk, you can also use  original soy milk, almod milk , coconut milk or rice milk as substitute. 

  • 1 Egg, which can be repaced with 1 tablespoon of chia seeds soaked for 10min. in 1/4 Cup of water.

  • 2 to 3 TBSP of sweetener, you can use brown sugar, agave, honey, beetroot syrup or maple syrup.

  • 1 Tsp of Baking Powder

  • 1/4 Tsp salt

  • 1 Tsp ground cinnamon

  • 1/4Tsp glound cloves (optional)

  • 1 Pinch nutmeg (optional)

  • 1½  Cup assorted fruits ( I love mixed berries or peaches, apples, pears are also delightful.)

  • 1 Tbsp raisins (optional)

  • 1Ripe Banana

  • 1 Tsp Vanilla extract

  • 2 Tbsp chilled butter (Optional). 

 

 

  1. Preheat the oven 180°C.

  2. Grease a medium glass baking pan. ( 10x10)

  3. In a Separate bowl mix all the dry ingredients, the oats ,nuts, salt, cinnamon, nutmeg, cloves. To this mix add 2/3 of the fruits and the raisins if using any.

  4. In a different bowl of the blender jar mix the wet ingredients, milk, vanilla extract, egg or chia mix, and sweetener.

  5. Put the dry ingredients into the baking pan and pour the wet ones on top, making  sure all the oats are properly soaked.

  6. Bake for 20 - 25 minutes or until the top dry and brown, take out of the oven and let it cool for a few minutes.

  7. Decorate on top with the remaining fruit.

  8. Serve warm or cooled.

 

NOTE:After it has completely cooled it can be stored in the fridge for about 3 to 4 days.
