Lentil Veggie Burgers

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

These burgers are rich in proteins, iron and other vitamins. Compared with other lentil burgers these have the best texture, they're moist and chewy, my non vegetarian friends love them and ask for them once in a while.

Ingredients:

 

1 Cup of lentils (any type works)

 

 

2½ Cups of Water

 

 

2 branches of fresh Thyme ( you can also use dry, about 1 tsp)

 

 

2 cloves of garlic

 

 

3/4 cup finely chopped onion.

 

 

1 Cup Fine Oat bran or bread crumbs

 

â…“ Unsalted Chopped nuts,(could be any of your preference, I like walnuts)

 

3 Cups finely chopped assorted Mushrooms 

 

 

1 Tbsp Extra Virgin Oil.

 

 

 Â½ tsp balsamic vinegar

 

 

1 beaten egg or if you want the vegan verssion you can soak 1Tbsp chia in ¼ cup water for 10 minutes.

 

1 Tbsp Dijon Mustard.

 

 

Salt and pepper.

 

 

Thoroughly wash the lentils,rinse them and drain them. In a medium size pot, sauté ¼ cup chopped onion with a little bit of olive oil, add 1clove of garlic , the water, add the lentils, thyme and bring them to boil at medium heat, then lower the heat and let simmer for 30-40 minutes, they will have absorbed the water. 

Meanwhile, in a sauce pan sauté the remaining onion and garlic with a pinch of salt. Once they have a golden tone, add the mushrooms (finely chopped), sauté for another 5-8 minutes.

Once the lentils are cooked, take out the thyme and garlic clove,mash them with a potato masher or a fork. Add the balsamic vinegar, mustard, olive oil, sauteed mushrooms and the beaten egg (or chia mix if you're making the vegan version). Mix all the ingredients well. 

In a food processor, put the nuts, oat bran (or bread crumbs) and mix them well.Slowly add the dry ingredients to the lentil mix, kneading well to make sure all the ingredientes are mixed properly and making sure is not dry, last add salt and papper to taste. 

Put the mix in an airtight container or covered with plastic wrap, and leave it in the fridge for at least 15-30 minutos, or even more. 

Shape the burgers, and cooked them in a silled pan with olive oil at medium heat, about 3 minutes on each side. 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

NOTE: once the burgers have cooled you can store them in a ziplock bag in the freezer.
